Pierna de Ternasco de Aragón Trufada (ASADA EN SU JUGO)
Ingredientes para cuatro personas:
1 pierna de Ternasco de 1 Kg / 100 gr. trufa a tiras / 400 gr. de zanahoria / 4 corazones de alcahofas / 400 gr. judias verdes finas / 400 gr. de patatas pequeñas / 4 tomates rojos / 1 vaso de vino blanco seco / 1/4 l.de caldo rubio Roux / aceite de oliva / sal / pimienta / mantequilla.
Preparación
Mechar la pierna con la trufa (reservar por el jugo).Salpimentar y rociar de aceite. Meter al horno 50-60 min.
Reservar la pierna. Desglosear la fuente con el vino y el caldo. Pasar por el chino y añadir la trufa reservada, picada al jugo.
Guarnecer con los tomates y las verduras cocidas troceadas al dente y salteadas con mantequilla.
Servir la pierna entera y rociar con el jugo trufado bien caliente.
