8 small Ternasco pitches / 1/2 onion / 1 carrot / 1 clove of garlic / 1/2 leek / 1 bay leaf / 2 ripe tomatoes / olive oil / flour / cognac / salt and pepper.
Pour the peppered jars into a casserole, with the oil very hot, saute until they begin to brown.
Add the chopped vegetables and cook for a few minutes, flambé with the cognac, pour a tablespoon of the flour, turn a few turns and dip with broth until covered. Salt rectify and bind the sauce: if it is clear with a little cornstarch dissolved in cold water, or with broth if it is thick. Add the jars and cook 2 minutes.
Serve with turned potatoes or vegetables, mushrooms or mushrooms.
