1 and 1/2 KG of Ternasco / 100 gr. of lard / salt / olive oil / bay leaf / parsley / water / vinegar / dry garlic, unpeeled / 4 potatoes / piquillo peppers.
Chop the Ternasco (it is preferable without a low cut and without legs) season and place on a plate or oven roaster, with the oil and lard.
Pour laurel, parsley and chopped garlic, a little water and vinegar. Roast over medium heat for about an hour, remove from grill and set aside. In the same juice of the roast put the potatoes sliced and lightly poached in oil. Finish cooking about 15 minutes.
Add the Ternasco already cut in portions and brown in the oven. Serve with the potatoes and the piquillo pepper in strips and sautéed with oil and a little sliced garlic. Finally prepare a chop with peeled garlic, oil and parsley leaves (ajolio) and saute over Ternasco.
